Biography
Assiate Professor Nicolas Bordenave’s research aims to understand the molecular interactions between macronutrients and phytonutrients in food systems. His lab explores how such interactions affect the respective nutritional properties of both macro and phytonutrients. In particular, he is interested in how interactions between phenolic compounds and polysaccharides (starch or dietary fibres) affect glycemic response and phenolic bioavailability in cereal, fruit, and vegetable-based food systems.
Professor Bordenave is actively involved in the Institute of Food Technologists (IFT): he sits on the Board of Directors of the IFT’s foundation, Feeding Tomorrow. He is also keenly active in scientific communication as a monthly contributor to Radio Canada’s program Moteur de rechercheprogram.
Prior to joining the School of Nutrition Sciences at the University of Ottawa, Bordenave held various research positions at PepsiCo’s research and development centers in Chicago and Leicester (UK). He also completed post-doctoral training with the US Department of Food Science and the Whistler Center for Carbohydrate Research at Purdue University in Indiana (US).
